In minor celebration of having 2 days off in a row, I started by sleeping late.

Needed it though. I worked an hour over last night, out of the kindness of my heart. They were going to be doing some electrical maintenance and as a result, were going to shut down the front half of the Casino. They needed a couple of 3-11 people to work until 11:30, I was told. At 11:30 I was the ONLY cashier for the entire front half of the Casino. And not happy about it.

It'll be a while before the kindness of my heart is seen again.

Spent most of this day lounging on the couch, reading LJ, watching TV. Did run out to Hobby Lobby with Demon. And stopped at the book store. I am currently kicked back reading World War Z and eating chips and queso.

I also picked up The Four Agreements. I have the cards already and enjoy them, when I remember to get them out.

Need to get into the kitchen at some point and get it cleaned up. The plan is to make Mexican Casserole tonight for dinner and as it stands now, that won't be happening until the dishes are done and the kitchen is put back together.

Oh OH I have that book. I did a lot of "DOH" and "YES OMG YES!! That is how you explain it". Which translates to me that I need to reread it.

I may have posted this before, it's a Wench Family recipe. Don't ask where it came from before my Mom.

Ingredient list made for feeding 4 people w/leftovers. Your mileage may vary with size of ingredients needed.

2-2 1/2lbs Ground beef or turkey.
Large can (Family Size) Cream O` Mushroom soup
Can of Red Enchilada Sauce
Tortilla Chips(big bag, enough for meal and munching)
Cheese (Mom always used American sliced. I've taken to using mild cheddar or mexican blend, although when nostalgia hits, it's Kraft Slices baby!)

Brown and drain meat. (I occasionally add cumin, chili powder, and other taco seasonings to mine. Mom was apparently either never instructed in the use of spices or was afraid of them.) To the skillet add soup and ench. sauce. Mix well.

Get out slow cooker.

Layer hamburger mix, chips, and cheese. 1st layer, meat on bottom cause melted cheese is a bitch to get out of a slow cooker pot.

Continue layers until you run out of meat mixture. Share a slice of cheese with dogs (also a Wench Family trad. If sliced cheese was being eaten, the dogs split a slice)

Put on lid and let the whole thing cook on HIGH for about 30 minutes or until the cheese is well melted and the chips are starting to get a little less mouth-stabbity.

Enjoy with favorite heartburn remedy. Although very tasty and a dish that brings squee's of joy from Demon and TMF when I decide to make it, it's been known to cause occasional bouts of unhappy at 4AM.

I forgot to mention, you crush the tortilla chips (to roughly about the size of a quarter) as you layer them.

Yeah, but after the Zombies gnaw on your bones and crunch your brains, the Four Agreements will help you feel much more positive about the experience. ^__~

Oh gawds... I could so turn this into a parody.
