Pumpkin Cookies 2
Oct. 1st, 2009 03:12 pmHeaded to work here in a minute. Taking cookies to test out on my coworkers. I don't have an issue with em, but TMF said they felt *rubbery* and Demon said the texture took some getting used to.
See...they aren't *normal* cookie texture. They are softer and more cakelike. If I can work out the baking time, they'd make great mini-muffins probably.
I doubled the amount of pumpkin in the recipe though and I may have been short a bit of flour, and that might have made a difference. It's my first time making them, so I have nothing to base them against.
Of course, if I didn't have to work today I could bake another batch.....damn you bills!
